All our beef is Ranch Raised, hand corn finished, and processed locally.

Pan seared tenderloin medallions in a marsala, red pepper and fennel sauce, served with
Linguini fini and browned garlic in oil and butter .
Roasted pork loin, in a green peppercorn sauce with onions, served with potato dumplings and asparagus.
Grilled quail and wild rice, served with a delightful mexican corn soup, "sopa flor de elote", and black beans.
Pan seared yellowfin tuna au poivre with shallots, sliced tomatoes and basil in vinaigrette, with roasted corn.
We are also capable of the standard camp fare of straight grilled steaks, mexican food, etc.
